Allergies and hormonal imbalance???

I'm one of those people whose brain is affected by food allergies. Eating even a tiny bit of wheat or dairy makes me sick as hell, disoriented, and induces a bipolar psychotic episode (which doesn't happen otherwise- no mental health problems while on the right diet). I didn't figure this out until several years ago since the doctors had always just called it IBS and treated the psychiatric aspect as entirely unrelated. I also had awful ovarian cysts& menstrual problems as a teenager, was told it might be endometriosis. Those problems went away entirely when I eliminated the allergens from my diet... and came back worse than ever this week after I decided to eat some ice cream. It even made my period come 2 weeks early which has literally never happened. Does anyone else have these problems too or know why they happen?? Either the cognitive or the hormonal thing. It's hard for friends and family to understand why I have to be on this diet when there's no good explanation as to why or how the allergens cause these atypical reactions
