Using ACV for shampoo?

I've been only shampooing once a week, conditioning every other day for a few years now. I recently started trying using apple cider vinegar instead of shampoo. even using it only once a week or once every other week, I tend to get a drier scalp. Is there a proper way to do it or is something I should stop doing all together? My best friend has a similar hair texture as me and uses ACV, however she lives in a different climate. I'm in a very dry climate. My main goals are to keep my hair from getting dry/brittle, have a healthy scalp, and encourage growth. I have hormonal imbalances due to PCOS so I'm on an IUD and I was told hopefully I will have more growth.

Oh also I deep condition once a week and apply a coconut oil to the ends after washing. I never use heat.
