I'm so frustrated by my weight, any help would be appreciated!

I'm sorry if this is ranty, but I'm ultimately looking for advice from such an inspiring community.

I feel so out of control of my weight and I'm not sure how to fix it. Before I continue, I have been working closely with my Dr. on the topic and she is confused by it and all my tests seemed very normal except for some hormonal imbalances (pcos).

I'm 5'3 23F, currently weighing 200lbs. I tend to pack a lot of muscle so my ideal weight usually sits around 140-150lbs. I was finally very fit and so happy about it, however I experience SA and spiralled into a 50lb weight gain in 4 months. I have been trying to shake the weight for the last 6 months and it seems like nothing I try works.

I live/work on a ranch so I am extremely active. My day is full of constant moving and physical labor. I haven't added any cardio in awhile because I'm an asthmatic and the smoke is bad right now.

In terms of diet, I wish I ate more. I use an app to track every single cal. I don't drink alcohol, and I avoid a lot of carbs/dairy/sugar if I can. I drink a cup or two of coffee in the morning and between my busy day and the heat, I'm lucky if I eat a protein bar before having a simple dinner in the evenings. I know this isn't healthy, but my dinners usually have a decent amount of protein. Still, I rarely consume more than 1000-1200 cals/day and this has always been the way I eat (one "real" meal/day). I drink a lot of water as well.

I did start at 212lbs, so I am down by 12lbs in the 6months. However, with every pound that I drop it seems like a new stretch mark appears which is a problem I have never had before! (No I'm not pregnant ;))

What am I doing wrong? It's so frustrating how much thinner other people are, eating 2x more than I am at my same height and having sedentary lifestyles. I live a little too far to join a gym right now, so any home-based recommendations would be great!
